Sweet & Green Turkey Bowls

What you need:

3-4 sweet potatoes

1 lb Organic lean ground turkey

Spinach or arugula 

Dried cranberries 

Goat cheese, crumbled 

Balsamic Vinaigrette dressing (love Primal brand)

The Recipe: 

Peel sweet potatoes and chop into bite size pieces. In a large bowl, toss sweet potato in with olive oil and salt + pepper. Spread across lined baking sheet and bake for 20 minutes. 

Meanwhile, brown the ground turkey in a skillet with salt + pepper. Set aside. 

When the sweet potatoes are soft, let cool for 5 minutes and serve.

Build your bowls: greens, sweet potatoes, turkey, cranberries, goat cheese, drizzle dressing and toss.
